Creating Turkey Muffins

Amy at Traurigs In Training shares a fun turkey snack of table decoration!

Pumpkin Chocolate Chip Muffin (with slightly healthier substitutes)

Ingredients:
4 eggs
2 cups sugar
1 can of pumpkin or 2 cups homemade pureed (recipe here)
1 tsp vanilla extract
1 1/4 cups of vegetable oil (I substituted coconut oil)
3 cups flour (I used 2 1/2 cups of flour and 1/2 to 3/4 cups wheat germ)
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
12 ounces semi-sweet chocolate chips

Preheat the oven to 400 degrees.  Beat together the first 5 ingredients.  Mix dry ingredients into your pumpkin mixture and add the chocolate chips.  Fill greased muffin cups 3/4 full.  Bake for 16-20 minutes.  Allow muffins to cool before you enjoy turning these delicious muffins into turkeys.

Turkey Supplies:
muffin
white or cream cheese frosting
green and red apples cut into slices
grapes
toothpicks

Poke a toothpick into an apple slice leaving some to poke into the muffin.  Continue with six total apples slices.  Poke into the muffin alternating green and red apples around the back half of the muffin.  Poke a toothpick into a grape and then into the muffin.  With frosting add eyes and a beak to the grape to create a face for the turkey.    

I love how much fun Amy’s daughter had making these!

Note from Amy:  It is all about making memories… not perfection.  My 3 year old had fun eating the muffin and saying it was a turkey.  I will forever remember my 3 year old talking about eating the turkey’s feathers.
