My sweet friend, Lee, served these Chicken Quesadillas to us one evening. Since then, this has become a meal that I fall back on. It is also one of my most requested meals by the fam. Not sure what it says about my cooking because this recipe is super easy!
Ingredients:
Chicken – cooked and shredded
BBQ Sauce (optional)
Shredded Cheese
Tortillas
Directions:
Cook the chicken – grill, boil, bake. I have found the easiest way is to place a bag of frozen chicken into a crockpot. Add a little water, seasonings, and cook several hours until the chicken literally falls apart. Drain the liquid (save for another use) and shred the chicken. I like to cook extra and put the leftovers in the freezer for another time.
Place a tortilla in a skillet on medium heat. (To make the tortillas taste even better, drop a couple of drops of olive oil into the pan. I typically skip this step just because it really isn’t needed and the extra calories definitely aren’t needed on these thighs.)
Spread BBQ sauce on the tortilla.
Top with shredded cheese and chicken.
Add the top layer of tortilla.
When the cheese has melted a little bit, carefully flip the quesadilla.
Cut with a pizza cutter. Add rice, chips, dip, and/or refried beans to make a quick, easy, and yummy meal.
